Highlights from the Eastern Mountain Sports Trek and Delete the Wheat Adventure Weekend in North Conway, New Hampshire

I loved joining EMS as their gluten free nutrition consultant for the June 27 -29 , 2008 weekend. We hiked through the forest, saw beautiful waterfalls, amazingly green and lush foliage, a bear cub, and later, the new, gigantic EMS store. One night we enjoyed organic, super healthy food (quinoa pilaf, super kale dish, an awesome banana/avocado/chocolate pie) at Katrina’s Organic Market. We ate favorite American food (onion rings, BBQ wings, burgers, chocolate brownies) the gluten-free way at Rafferty’s and were treated to homemade pancakes, French toast and daily appetizers (cheesy dough balls one day; dates wrapped in prosciutto the next) at our inn. There was a lot of gluten free eating going on.

During the weekend, I gave classes on nutrition for outdoor adventure so we were all counting grams of protein and carbs the next day on the trail, figuring out what was healthiest to eat. We ended up eating all of it. Our guides on both days were great! We hope to do it again soon. EMS Trek is considering trips up and down the eastern seaboard as well as international ones. There's talk of Kilimanjaro early next year.
